Pasta with Salmon and Parmesan

Ingredients

  • 120g pasta (uncooked) (penne or spaghetti)
  • 2 salmon fillet (1x125g), skinless
  • 1 garlic clove, minced
  • 20-30g Parmesan
  • Juice of 1/2 lemon
  • Fresh parsley, chopped (for garnish) (Optional)
  • Salt and pepper

Preparation

  1. Cook the Pasta: In a large pot of salted water, cook the pasta according to the package instructions until al dente.

  2. Cook the Salmon: In a large non-stick pan over medium heat, place the salmon and cook for 3-4 minutes on each side until well-cooked. Remove the salmon from the pan, cut it into pieces, and set aside.

  3. Prepare the Sauce: In the same pan, sauté the garlic and mushrooms until they soften and release their aroma (about 1 minute).

  4. Combine Ingredients: Add the cooked pasta to the pan with the mushrooms and garlic. Gently incorporate the salmon and stir so all ingredients blend well.

  5. Serve: Season with salt and pepper to taste, and, if desired, garnish with fresh parsley and grated Parmesan. Serve the dish warm.
