Toast with smoked salmon and eggs

Ingredients

  • 1 slice of your favorite bread (sourdough, whole grain, or rye works well)
  • 2 eggs
  • 30g smoked salmon
  • 1/4 ripe Avocado 
  • Salt, and pepper to taste
  • Lemon juice (optional)
  • Fresh Dill or chives for garnish (optional)

 

Preparation

1. Prepare the eggs: 

  • Heat a skillet over medium heat and add the olive oil or fry light cooking spray. 
  • Crack the eggs into the skillet and cook them sunny side up or to your preferred level of doneness. Season with a little salt and pepper.

2. Toast the Bread:

  • While the eggs are cooked, toast the slice of bread until golden brown.

3. Prepare the avocado:

  • Cut the avocado, remove the pit, and scoop the flesh into a bowl.
  • Mash the avocado with a fork until smooth. You can add a squeeze of lemon juice and a pinch of salt for extra flavor.

4. Assemble the Toast: 

  • Spread the mashed avocado evenly over the toasted bread slice. 
  • Layer the smoked salmon slices on the top of the avocado.
  • Place the cooked eggs on the top of the smoked salmon.

5. Garnish and Serve:

  • Sprinkle with freshly ground black pepper.
  • Garnish the fresh dill or chives if desired. 
  • Serve immediately and Enjoy! 

Tips: 

  • If you prefer, you can poach or scramble the eggs instead of frying them. 
  • Add a few thin slices of red onion or capers for extra flavor.
