Preparation
1. Prepare the eggs:
- Heat a skillet over medium heat and add the olive oil or fry light cooking spray.
- Crack the eggs into the skillet and cook them sunny side up or to your preferred level of doneness. Season with a little salt and pepper.
2. Toast the Bread:
- While the eggs are cooked, toast the slice of bread until golden brown.
3. Prepare the avocado:
- Cut the avocado, remove the pit, and scoop the flesh into a bowl.
- Mash the avocado with a fork until smooth. You can add a squeeze of lemon juice and a pinch of salt for extra flavor.
4. Assemble the Toast:
- Spread the mashed avocado evenly over the toasted bread slice.
- Layer the smoked salmon slices on the top of the avocado.
- Place the cooked eggs on the top of the smoked salmon.
5. Garnish and Serve:
- Sprinkle with freshly ground black pepper.
- Garnish the fresh dill or chives if desired.
- Serve immediately and Enjoy!
Tips:
- If you prefer, you can poach or scramble the eggs instead of frying them.
- Add a few thin slices of red onion or capers for extra flavor.
