Pancakes with banana and Oats

Ingredients

  • 40g rolled oats 
  • 1/2 banana
  • 1 large egg
  • 2 egg whites 
  • 50ml milk (dairy or non-dairy)
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)
  • 1 pinch of salt 
  • Cooking spray or a small amount of oil for the pan 

For Serving: 

  • 10g Honey/maple syrup
  • 1/2 banana
  • Nut butter (optional)

Preparation

1. Prepare the Batter:

  • Combine the rolled oats in a blender until they form a fine flour-like consistency.
  • Add the ripe banana, eggs, milk, baking powder, vanilla extract, cinnamon (if using), and a pinch of salt to the blender.
  • blend until the mixture is smooth and well combined. 

2. Heat the Pan:

  • Heat a non-stick skillet or griddle over medium heat. 
  • Lightly grease the pan with fry light cooking spray or a small amount of olive oil. 

3. Cook the Pancakes:

  • Pour about 1/4 cup of batter onto the skillet for each pancake. 
  • Cook for 1-2 minutes until bubbles form on the surface and the edges start to set.
  • Flip the pancakes and cook for an additional 1-2 minutes until golden brown and cooked through. 

4. Serve:

  • Serve the pancakes warm with your favorite toppings such as fresh fruit, maple syrup, honey, yogurt, or nut butter. 

Tips:

  • For a thicker batter, reduce the amount of milk slightly. For a thinner batter, add a little more milk. 
  • You can add chocolate chips.
  • If you prefer, you can mash the bananas by hand and mix the ingredients in a bowl instead of using blender.
