Preparation
1. Prepare the Batter:
- Combine the rolled oats in a blender until they form a fine flour-like consistency.
- Add the ripe banana, eggs, milk, baking powder, vanilla extract, cinnamon (if using), and a pinch of salt to the blender.
- blend until the mixture is smooth and well combined.
2. Heat the Pan:
- Heat a non-stick skillet or griddle over medium heat.
- Lightly grease the pan with fry light cooking spray or a small amount of olive oil.
3. Cook the Pancakes:
- Pour about 1/4 cup of batter onto the skillet for each pancake.
- Cook for 1-2 minutes until bubbles form on the surface and the edges start to set.
- Flip the pancakes and cook for an additional 1-2 minutes until golden brown and cooked through.
4. Serve:
- Serve the pancakes warm with your favorite toppings such as fresh fruit, maple syrup, honey, yogurt, or nut butter.
Tips:
- For a thicker batter, reduce the amount of milk slightly. For a thinner batter, add a little more milk.
- You can add chocolate chips.
- If you prefer, you can mash the bananas by hand and mix the ingredients in a bowl instead of using blender.
